Pullman loaf is also called as sandwich loaf or pan bread!! It’s French sandwich bread with four square corners.
Pullman loaf is frequently used in the preparation of sandwiches. It has a perfect shape with soft texture and fine crumb. The loaf is prepared in a special pan with a sliding top to obtain the desired shape. We use whole wheat flour, sugar, salt and oil for the preparation of Pullman loaf. Since we use a lid, the loaf is firm with closed-grains and evenly rectangular on all edges. It’s moist and melt-in-mouth bread with very thin crust.
