Why it`s Christened as Black Forest?
The cake is named after the Black Forest (Schwarzwald) mountain range in southwestern Germany. May be because it evokes the darkness and mystery coming from the vast forest ranges. However, the name can also be connected to the specialty liquor known as Schwarzwälder Kirsch(wasser) of that mountain region. Distilled from tart cherries, this unique ingredient, with its istinctive cherry pit flavor and alcoholic content gives the cake its rich flavour.
Who first Baked Black Forest?
Who invented the Black forest? It`s a bit ambiguous question to answer. Josef Keller (1887–1981), a confectioner claimed to have invented Schwarzwälder Kirschtorte in its present form in 1915 at then prominent Café Agner in Bad Godesberg, now a suburb of Bonn about 500 km north of the Black Forest. However, this has yet to be proven beyond all doubt. Certain researches pointing to Tübingen master patissier Erwin Hildenbrand state that he has invented the Black Forest gateau in the spring of 1930 at the Café Walz in Tübingen.
The chocolate sponge consists of several layers of chocolate cake, with whipped cream and cherry filling between each layer. Then the cake is lavishly decorated with additional whipped cream, maraschino cherries, and chocolate shavings. In certain European traditions sour cherries are used both between the layers and for decorating the top. Kirsch, a clear liquor
distilled from tart cherries, is the traditional ingredient which adds a unique flavor to the cake. However, various kinds of liquors are also used; rum is common in Austrian recipes. In
North America, Black Forest cake is generally prepared without alcohol. In Germany, Kirschwasser is a mandatory ingredient in Black Forest. If it doesn`t contain it, the cake is legally not allowed to be marketed as Schwarzwälder Kirschtorte. Real Black Forest cakes are decorated with sumptuous black cherries.
